These 4 ingredient banana pancakes are a simple and easy snack or breakfast that's easy on your gut. The flourless pancakes are SCD, Paleo, Whole30, gluten free, grain free, dairy free, and added sugar free.
This 4 ingredient banana pancake recipe are so easy to make and are perfect for using any overripe bananas you might have hinging around.
These healthy banana egg pancakes don't have the fluff or rise of traditional pancakes. They are very thin and have more of a crepe consistency.
I enjoy them as a snack and they're also one of my go-to foods when my ulcerative colitis is acting up.
In fact, I also used this Paleo banana pancake recipe when introducing eggs to my baby...he loved them!
Ingredients
Bananas - Use ripe or overripe bananas for a stronger and sweeter flavor.
Eggs - I have not tried any egg substitutions in the recipe so I'm not sure if it would work.
Ground Cinnamon -The cinnamon adds a bit of flavor to the pancakes along with some anti-inflammatory properties. It is however, optional.
Vanilla Extract - The vanilla adds another layer of flavor to the pancakes but just like the cinnamon, it's optional.
Directions
Chose a banana that is overly ripe, you know, the ones that have lots and lots of brown spots (ideally you'll want to choose a banana that's riper than the one pictured below).
This will make the banana easier to mash and give the pancakes some sweetness and banana-y flavor!
Use the back of a fork to mash the banana really well, then whisk in a beaten egg, cinnamon, and vanilla extract.
Alternatively you can place the ingredients in a blender and blend until smooth.
Grease a heated skillet or griddle and ladle on only a dollar size amount of batter.
Making the pancakes any larger will make these healthy banana egg pancakes too difficult to flip.
Cook for 2 to 3 minutes per side. They should be a lovely golden brown color.
What should I top the pancakes with?
Many times I enjoy these banana pancakes on there own without any topping, especially if I'm in a flare.
However, any traditional pancake toppings like honey, maple syrup (if not following SCD), jam, fresh fruit, etc. would all be delicious!

- Mash banana really well. Stir in egg, vanilla extract, and cinnamon.
