This Vanilla Coconut Flour Mug Cake recipe is a moist and fluffy single serve dessert that takes just two minutes to bake in the microwave. This healthier treat is SCD and Paleo friendly! It's gluten free, grain free, dairy free, and refined sugar free.
I've always had a huge sweet tooth, so giving up traditional desserts when I started on the SCD diet a few years ago was very difficult.
Even now I have a tendency to eat too many "healthy" sweets and baked goods, which is why I love the idea of a coconut flour microwave cake.
It satisfies my need for a sweet treat, bakes quickly, and I don't have extra hanging around the house tempting me!
Ingredients
Coconut Flour - Coconut flour requires a lot of moisture, so I don't suggest using a different flour. If you'd like to use almond flour, then my Almond Flour Vanilla Mug Cake is for you!
Baking Soda
Egg
Coconut Milk - Any nut milk, such as almond or cashew milk, can be used instead.
Coconut Oil - If you prefer not to use coconut oil, then olive oil can be used instead. If dairy isn't an issue for you, then melted unsalted butter can also be used.
Honey
Vanilla Extract
How do you make a coconut flour mug cake?
In a mug mix the coconut flour and baking soda together.
Use a small bowl to whisk the egg, honey, vanilla extract, coconut oil, and coconut milk.
Then pour the wet ingredients into the mug and stir well.
It takes coconut flour a bit of time to absorb moisture so allow the batter to sit for about one minute before whisking again.
Pop the mug into the center of the microwave for two minutes.
The cake is done when it's a golden brown color and the sides have pulled away from the mug a bit.
A toothpick inserted into the center of the cake should come out clean.
Allow the cake to rest for a few minutes before digging in! Hope you enjoy!
Tips
- Before beginning it's extremely important that ALL the ingredients are at room temperature or you'll end up with a lumpy batter.
- I use full fat canned coconut milk for this recipe but any dairy free milk will work.
- For even baking, pick a mug that has straight sides.

Vanilla Coconut Flour Mug Cake
Ingredients
- 2 Tablespoons coconut flour
- ½ teaspoon baking soda
- 1 large egg
- 2 Tablespoons full fat canned coconut milk
- 2 Tablespoons melted coconut oil
- 2 Tablespoons honey
- 1 teaspoon vanilla extract
Instructions
- In a mug with straight sides, whisk together the coconut flour and baking soda.
- In a small bowl mix the egg, coconut milk, coconut oil, honey, and vanilla extract.
- Add the wet ingredients to the mug and whisk until well combined. Allow the batter to sit for 1 minute (this allows the coconut flour to absorb some of the liquid) before whisking again.
- Place the mug in the center of the microwave and cook for 2 to 3 minutes or until a toothpick inserted into the middle of the cake comes out clean.
- Add your choice of toppings and enjoy!
Notes
