This easy Coconut Flour Waffles Recipe is a great addition to your breakfast rotation! The waffles are dense, sweet, and have just the slightest hint of vanilla! They're SCD, paleo, gluten free, grain free, dairy free, and refined sugar free.

A waffle topped with cashew cream and sliced strawberries on a black plate.

I have a deep love for all things breakfast and this coconut flour waffles recipe does not disappoint!

The waffles come together easily and are soft, dense, and incredibly filling with just a hint of vanilla!

Can almond flour be used instead instead of coconut flour?

Almond flour and coconut flour CANNOT be easily substituted for one another.

Coconut flour requires much LESS flour and much MORE moisture than any other flour.

Unfortunately there's no easy 1:1 substitution for coconut flour.

If you prefer almond flour waffles, try my Apple Cinnamon Waffles recipe!

    Ingredients

    • coconut flour
    • baking soda
    • eggs
    • nut milk
    • honey
    • vanilla extract

When it comes to the nut milk, I prefer using full fat canned coconut milk but almond, cashew, pecan, or even walnut milk will all work!

Waffles in a baking tray. One waffle on a grey plate with a small bowl of strawberries.

    Directions

Before beginning, make sure all of the ingredients are at room temperature.

Heat your waffle maker and make sure it's greased according to the manufacturers instructions.

Whisk all of the ingredients in a large bowl until well combined, then let the batter sit for a few minutes.

This allows the coconut flour to absorb all the moisture.

A four photo collage showing how to whisk together the batter, ladle it onto the waffle maker, and gently remove the cooked waffle.

Speaking of moisture, coconut flour sucks up LOTS of it, which is why you might be surprised by the amount of eggs and liquid this recipe takes. Trust me and use it all!

Pour ½ cup of batter into the prepared waffle iron, adjusting the amount of batter based on the size of your appliance.

Each waffle cooks for 5 to 7 minutes over medium heat until lightly browned.

Gently take the waffle out of the waffle iron using a rubber spatula. Repeat, greasing the appliance as needed, until the batter is gone.

Waffles in a baking tray. with one waffle on a grey plate topped with cashew cream.

    Can I freeze the waffles?

    Yes! These guys freeze beautifully!

Once the waffles have cooled, they can be stored in a freezer safe container with a piece of parchment paper separating each one.

The waffles can be defrosted and reheated in either the microwave or toaster. Easy peasy!

One waffle on a grey plate topped with cashew cream and strawberries. Cinnamon honey syrup is being poured on top.

What can I top the waffles with?

With their subtle vanilla flavor, these easy coconut flour waffles are wonderful to have plain with a generous pour of honey (or maple syrup if not following SCD).

If you want to get a bit more decadent then try topping the this coconut flour waffles recipe with:

    • fresh berries
    • a big dollop of Sweet Cashew Cream
    • Whipped Coconut Cream
    • a smear of Healthy Apple Butter
    • a spoonful of Paleo Lemon Curd
One waffle on a grey plate topped with cashew cream, strawberries and cinnamon honey syrup.

Just made these and definitely will make again! I was worried that they might have that grainy texture that coconut flour breads sometimes can have, but they came out soft and fluffy. For reference, I made a half batch (just making for 2) and got 8 small waffles from my Dash mini waffle maker.

I tried this recipe to use up some coconut flour I had on had. I please with the result. I was afraid the waffle would not hold it's shape but that was not a problem. I added cinnamon, cloves, and nutmeg to the batter and find them very tasty. Thank you.

Made these and I can’t say I’m converted yet. They were incredibly dry and burned very easily despite turning the temp down. Not making these again.

omg I never knew about using coconut flour for pancakes and am so trying this! How do you make the cinnamon honey syrup to go on top, can I use maple syrup instead maybe?

Hi Cindy! If you do end up making them (and I hope you do!) you'll have to come back and let me know what you think. For the cinnamon honey syrup I mix 1/4 cup of honey and 1 Tbsp of cinnamon then heat it up in the microwave. Really simple and yummy! Because of my dietary restrictions honey is the only sweetener I can use, but you can absolutely use maple syrup if you prefer!

What do you mean non dairy milk? Almond milk, cashew milk. I believe Elmhurst makes one with only the nuts that is SCD legal.

Canned coconut milk (as long as it's shaken), almond milk, cashew milk, or walnut milk will all work. Last I checked yes, Elmhurst has an unsweetened almond milk and unsweetened cashew milk that's SCD legal. I believe the brand MALK also has an SCD legal unsweetened almond milk. I have a recipe for homemade almond milk that you could also try.
