Grinch Pancakes are a healthy and kid friendly breakfast made with almond flour, naturally dyed with spinach, and topped with strawberry heart slices! These Grinch green pancakes are SCD, Paleo, gluten free, grain free, dairy free, and refined sugar free.
A few weeks ago we took the kids to the movie theatre to see The Grinch (it was super cute by the way), and they are now obsessed with all things Grinch!
I've already made them my Avocado Mint Ice Cream, which I lovingly call Grinch ice cream this time of year, and they love it!
Then an IHOP commercial for Grinch Pancakes began making the rounds on TV and I'm not gonna lie, they look amazing.
A quick look on the IHop website showed that those pancakes have an astounding 30 grams of sugar, which is more than the American Heart Association recommends for a full day!
So, I set out to make my own healthy green pancakes!
These almond flour pancakes are full of protein and are naturally colored with baby spinach!
Not to worry though, you can't taste the spinach at all!
Each pancake is topped with cute little strawberry heart slices because, let's not forget, "...that the Grinch's small heart grew three sizes that day. "!
Pancake ingredients
Just seven basic ingredients are needed for this Grinch pancakes recipe!
- blanched finely ground almond flour
- baking soda
- fine sea salt
- eggs
- honey
- water
- baby spinach
- fresh strawberries
Directions
Begin making these easy spinach pancakes by placing all the ingredients (except the strawberries) into a blender.
Process until the batter is smooth and the pieces of spinach are no longer visible.
Heat a skillet or griddle and ladle a ¼ cup of batter per pancake.
Make sure to keep these pancakes a bit on the smaller side so that they're easier to flip.
Cook for about 5 minutes before gently flipping the pancake and cooking for another few minutes.
How to make strawberry heart slices
Use a sharp knife to cut a V shape around the strawberry stem and remove it.
Cut the strawberry vertically, right down the middle.
You'll now have two strawberry hearts! Easy right?!
Top each Grinch pancake with a strawberry heart slice before serving.
What else can I top the pancakes with?
I enjoy topping these healthy green pancakes with a drizzle of honey but if you're not following the SCD diet then maple syrup can be used.
To make the pancakes look a bit more like the IHOP version, you can also top the pancakes with a big dollop of Sweet Cashew Cream or Whipped Coconut Cream!
What other time of year can I make these pancakes?
Anytime! These healthy green pancakes can be made anytime of year.
It's a kid-friendly recipe that's perfect for sneaking in some spinach!

Grinch Pancakes
Ingredients
- 2 cups blanched finely ground almond flour
- ½ teaspoon fine sea salt
- ½ teaspoon baking soda
- 1 Tablespoon honey
- ½ cup water
- 3 large eggs at room temperature
- 1 cup baby spinach packed
- coconut oil for greasing pan or griddle
- 6 strawberries
Instructions
- Place the almond flour, salt, baking soda, honey, water, eggs, and baby spinach in a blender. Process until smooth and you can no longer see pieces of spinach.
- Set a large skillet or griddle over medium heat and grease with oil. Ladle ¼ cup of batter per pancake onto the griddle. Cook for about 5 minutes before gently flipping the pancakes and cooking for another 2 to 3 minutes.
Strawberry Heart Slices
- Use a sharp knife to cut a V around the stem of the strawberry. Remove the stem.
- Cut the strawberry in half, vertically to make 2 strawberry hearts.
- Place a strawberry heart on each pancake before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for 3 to 5 days or in the freezer for up to 3 months.
- Feel free to top the pancakes with Whipped Coconut Cream or Sweet Cashew Cream!
