    Prosciutto Wrapped Pears

    Prosciutto wrapped pears are a perfect combination of salty and sweet! It's an easy, elegant appetizer recipe that follows SCD (specific carbohydrate diet), and is gluten free, grain free, soy free, and refined sugar free. This prosciutto recipe can be made Paleo and dairy free by omitting the cheese.

    Appetizer, snack, lunch... I've eaten and enjoyed this recipe for all of the above!

    The pears are stuffed with gorgonzola cheese, wrapped with prosciutto, and baked until the pears are soft and prosciutto is crisp!

    The dish is then drizzled with honey and sprinkled with fresh thyme leaves! Is your mouth watering yet!?

    What is prosciutto?

    Prosciutto is a very thinly sliced Italian cured ham with a very salty flavor that can either be served raw (the curing processing makes it safe to eat) or cooked.

    I typically purchase prosciutto from Whole Foods but it should be available in your local grocery store.

    How to make prosciutto wrapped pears

    Begin by cutting the ripe (but firm) pears lengthwise into four equal pieces (photo 1).

    Use a small spoon or paring knife to scoop out the core (photo 2).

    Fill each small hole where the core used to be with a spoonful of gorgonzola cheese (photo 3).

    Now, the cheese in this recipe is completely optional but if your stomach can handle the dairy, I highly recommend it!

    It adds another delicious layer of flavor and texture to the dish.

    Lay the prosciutto on a cutting board and slice vertically to make long, thin strips of ham (photo 4). Each strip should be wide enough to cover half a pear slice.

    Wrap each pear in a slice of prosciutto making sure to cover the hole with the cheese completely (photos 5 & 6), then place in a baking dish.

    Drizzle the pears with olive oil and use your hands to rub the oil over each piece (photo 7).

    Bake in the oven until the pears are slightly tender and the prosciutto is bubbly and crisp (10 - 15 minutes)!

    Remove the baking dish from the oven and immediately drizzle your favorite honey over the prosciutto wrapped pears before sprinkling with fresh thyme leaves and extra cheese (photos 8 & 9)!

    Cooking and Substitution Tips:

    • Use your favorite type of pear for this recipe; just make sure the fruit is firm but ripe! If too soft, the pears will turn mushy while baking.
    • Crisp, sweet apples can be used in place of the pears.
    • The gorgonzola can be swapped out for Blue cheese or Brie.
    • Store leftovers in an airtight container in the refrigerator. Reheat the prosciutto wrapped pears by placing back into the oven for a few minutes just until warmed through.

    Equipment

    • cutting board
    • chefs knife
    • small spoon or paring knife
    • 9x13 baking dish

    Ingredients
      

    • 3 firm but ripe pears
    • 3 ounces prosciutto (should be about 6 thinly sliced pieces)
    • 4 ounces gorgonzola cheese (optional)
    • ¼ cup olive oil
    • 2 Tablespoons fresh thyme leaves
    • ¼ cup honey

    Instructions
     

    • Preheat oven to 400F
    • Cut each pear lengthwise into four equal pieces (you'll have 12 pear slices). Use a small spoon or paring knife to scoop out the core.
    • Stuff the small holes where the core used to be with the gorgonzola cheese. (If you've decided not to use cheese, just skip to the next step.)
    • Slice each piece of prosciutto in half lengthwise to create 12 long strips.
    • Wrap each slice of pear with a strip of the prosciutto making sure to cover the cheese completely, then place in the baking dish.
    • Evenly drizzle the olive oil over the prosciutto wrapped pears and use your hands to ensure the oil is covering each pear.
    • Place the baking dish into the oven and roast for 10 to 15 minutes. The appetizer is done once the pears have softened slightly and the prosciutto is bubbly and crisp.
    • Remove the baking dish from the oven and immediately drizzle the pears with your favorite honey and sprinkle with fresh thyme leaves. Serve warm.
    • Store leftovers in an airtight container in the refrigerator for two days. Reheat by placing back into a 400F oven just until warmed.

    Notes

    • Brie or blue cheese can be used instead of gorgonzola. 
    • Crisp, sweet apples can substituted for the pears. 
    • Use your favorite honey for this dish! I used local orange blossom honey.

      Hi I’m new to SCD but I didn’t think prosciutto was legal and I didn’t find much information when looking it up. This recipe looks amazing!!

        Hi Laura! Unless something has changed, prosciutto is legal as long as pork and salt are the only ingredients listed.
